Erwin Mierisch and his team at El Limoncillo return to us with this Natural Yellow Pacamara.

We’re thrilled whenever we get coffee from Mierisch as it is always outstanding, as this year's. El Limoncillo proves. We have been lucky enough to taste this coffee over the years as it was developing at the farm and jumped at the chance to purchase again.

The Farm, Limoncillo

Finca Limoncillo, located in Nicaragua's Matagalpa region, spans 171 hectares, with 109 dedicated to coffee cultivation and the rest for cattle, horses, and natural woodland. Owned by the Mierisch family, respected producers and close friends, the farm emphasises sustainability with minimal chemical use and careful land management. They employ over 3,000 staff during the harvest, and 60 families live on the farm year-round. Limoncillo has 7 waterfalls, its own hydroelectric camp provides electricity for the 60 + people that live on the farm permanently.

Yellow Pacamara — What is this ?

The Yellow Pacamara was discovered on this farm as a mutation. Most Pacamara are red, but the security guard who works on the farm noticed that one tree had turned yellow. They took some seeds from that tree, planted them, and let them grow until the seeds were consistently producing yellow Pacamara. This variety is incredibly distinct and has a lot of character. Only about 10% of a Yellow Pacamara yield does not mutate back to red pacamara, which really makes every bean special. As far as growing, Yellow Pacamara isn't any harder than Red Pacamara & the taste profile is consistent.

Doc Mierisch

Mierisch started his career as a Medical Doctor, but coffee farming has always been a part of his life. He‘s a 3rd generation coffee producer and processor. The General of the operation but everyone calls him “Doc". When not doing surgery, you will find him in the machine shop or in the field. Truly hands on, there are few hurdles that he can't overcome or figure out. A skill that is tested thoroughly everyday. Constantly tweaking and improving, his favourite place is designing, modifying, and machining equipment. It's probably cheaper to buy something new but what’s the fun in that?

Erwin “Wingo” Mierisch

Erwin Mierisch or 'Wingo' is the 5th generation of coffee producers in the family. Before coming back to Nicaragua he served a brief stint as a barista in NYC. His passion for innovation and research has led him to head development of new post-harvesting processing methods, and fine tune the QC lab protocols to increase quality and consistency in workflow. Erwin now looks after the operations & logistics on the Mierisch farms.
